Frito-Lay has the perfect summer snack for however you celebrate, whether you’re relaxing and unwinding at home with Lay’s® Classic potato chips or celebrating summer with Tostitos® Scoops!® tortilla chips at a backyard party.
My sister’s husband just turned 41 this past weekend! We had a family get-together to celebrate and to visit with my nephew, who is a Marine and was only home for the weekend.
All the kids got to roast weenies on the fire and we had lots of yummy food. Some were old favorites and some were new ones like the Black Bean Corn Bites.
Frito-Lay’s Corn and Black Bean Bites Recipe
This recipe only takes a few minutes to prepare, you can make it the night before and add it to TOSTITOS® SCOOPS!® Tortilla Chips in just minutes!
I also made my sisters amazing Creamy Spinach and Artichoke Dip! Just like the Bean Bites, this dip can be served with Lay’s® Classic Chips or Tostitos® Scoops!®.
I’ve never seen a recipe like this online. Most of them use mayonnaise, this one has heavy whipping cream. If you’re not a fan of cottage cheese, don’t worry. I’ve had people eat this that hate cottage cheese, tell me this was the best dip they’ve ever had!
Creamy Spinach and Artichoke Dip
- 1 package of frozen chopped spinach – thawed and drained
- 2 cans Artichoke Hearts (not marinaded) – drained and chopped
- 1/2 pint Heavy Whipping Cream
- 2 packages of Cream Cheese
- 2 cups Mozzarella
- 1 1/2 cups Parmesan
- 160z Cottage Cheese (or more)
Seasoning:
- Garlic Salt
- Garlic Powder
- Black Pepper
- small amount of Cayenne Pepper
Mix all the ingredients together in a large bowl. Season to taste. Place in a 13×9 inch pan. (I add extra garlic salt on top before baking.)
Bake for 40 min on 350-400 degrees until edges are brown and all ingredients are melted. Stir occasionally if needed.
