My youngest daughter is a very picky eater which makes packing her lunch a challenge. She’s not a fan of most sandwiches, or vegetables, or anything that’s not covered in chocolate. However, she is a big fan of tomatoes so I usually try to incorporate them into her school lunches. SUNSET® produce sent me a variety of tomatoes, peppers, and cucumbers for us to try, so I’m going to show you how I used them in these heavenly lunches!

Pasta salad is a family favorite. I usually make a big batch which can last up to three days. It makes a quick and delicious lunch for myself or after school snack for the kids. I included bow tie pasta, black olives, broccoli, Wild Wonders® tomatoes, and italian parmesan dressing, but you can add anything you like.

Lunchbox Ideas - Fresh Salad

A fresh salad is the best way to pack a meal full of vegetables. I added lettuce, black olives, carrots, One Sweet® cucumbers, and One Sweet tomatoes. Store the dressing in a separate container so the salad stays fresh until lunchtime.

I made these SUNSET Sweet Bell Peppers for dinner the night before. Then in the morning before school, just reheat the stuffed bell peppers, and use a thermos to keep the food warm. The kids can add the sour cream, black olives, and the Angel Sweet® tomatoes at school.

Lunchbox Ideas - Roasted Tomato Pasta

Another meal that can be made the night before is this delicious pasta. Just reheat and put it in a thermal container to keep it warm. The Angel Sweet tomatoes can be roasted separately in the oven or cooked directly into the sauce.

Lunchbox Ideas - Pizza Kit

The Pizza Kit is definitely my girls’ favorite lunch! I typically package each item separately and then they assemble it at school just like a lunchable. It’s a big hit with all the kids, and I have had other moms ask me how I make these because their kids have been begging them for one in their lunchbox. The crust is pre-baked and doesn’t need to be heated. I cut it into fun shapes like stars and mini circles, then add pizza dipping sauce, mozzarella cheese, black olives, and One Sweet tomatoes.

This lunchbox is probably the easiest of all the meals – crackers, cheese, salami, Wild Wonders tomatoes, and blueberry muffins for dessert.
